Krokos Kozanis PDO Saffron κρόκος Κοζάνης
Crocus sativus
Hand-picked stigmas from the Kozani valley — EU-protected, naturally rich in crocin and safranal.*

One place in Greece grows saffron. One cooperative has done it since 1971. It takes 150,000 hand-picked flowers to make a kilo.
The plateau of Kozani, northern Greece — cold nights, dry autumns, and the only saffron fields in the country.
Crocus sativus blooms for two weeks in October. Each purple flower carries three red threads — and nothing else of value.
Whole families pick at dawn before the sun opens the petals, then sit at kitchen tables pulling the threads out by hand.
A few threads steeped in hot water turn it gold in minutes — for tea, rice, bread and Greek Easter tsoureki.
Krokos Kozanis is one of only a handful of saffrons with Protected Designation of Origin, and its crocin content — the measure of colour and potency — is among the highest ever recorded. It has been grown on the Kozani plateau since the 17th century and by the same cooperative since 1971.
Every gram is hand-picked, hand-separated, dried and sealed within days. Certified organic.

Saffron needs a few minutes in warm liquid to release its colour and aroma — never throw it in dry.
Less than you think. Ground saffron releases everything at once — start with a pinch you can barely see, then adjust.
Saffron is the most adulterated spice on earth. Origin protection is your guarantee.
Real saffron threads are trumpet-shaped, deep red with slightly lighter tips, and turn water gold slowly — not instantly. Ours is PDO Krokos Kozanis, graded and sealed by the Kozani Saffron Producers' Cooperative.
A very small pinch (about 1/16 tsp) per cup of tea or warm milk, or 1/8 tsp per 4 servings of rice, soup or dough. Powder needs no soaking — stir it straight in. Half a gram is roughly 60–70 uses.
In its sealed container, in a cool, dark, dry cupboard. Saffron keeps its aroma for 2–3 years; light and humidity are its enemies.
Floral, honeyed and faintly bitter, with a hay-like, earthy aroma and a brilliant golden colour. A little is perfect; a lot is medicinal.
Saffron is one of the most antioxidant-dense foods known (crocin, safranal, picrocrocin) and has been used since antiquity for mood, digestion, eyes and skin.* A few threads a day is the traditional dose.

Kozani saffron in every form — threads, powder, honey and tea.
I grew up on Ikaria, where herbs were not a wellness trend — they were what my grandmother picked on the hillside, dried on the roof and brewed every evening for whoever walked through the door.
Real leaves and roots, never the broken dust sealed into a bag.
Every plant we sell is harvested at peak potency, hand-cut, air-dried the traditional way and hand-packed. Nothing added, nothing taken away.
