How to brew

How they'll brew it

Whole leaves and flowers — every spoonful steeps twice. Honey goes in after the steep, never in boiling water.

Hot

  1. 1 tsp (a good pinch) per 8 oz cup
  2. Water just off the boil (212°F)
  3. Cover and steep 5–7 minutes
  4. Strain, sip — then steep the same leaves again

Cold brew

  1. 4–6 tsp per quart of room-temperature water
  2. Steep 4–6 hours (or overnight in the fridge)
  3. Strain and pour over ice
  4. Optional: add honey or a lemon slice
