Is your honey raw, and how is it different from supermarket honey?
Yes — raw, unheated, unfiltered, and unprocessed, exactly as the bees made it. Most supermarket honey is pasteurized, ultra-filtered, and sometimes blended with syrups of unknown origin. Ours is single-origin from Ikaria, our bees forage freely across wild thyme, heather, and mountain herbs rather than monocrop fields, and every batch is USDA Organic certified and packed plastic-free.
What are the benefits of raw honey?
The main draw is that nothing's been taken out: because ours is never heated or filtered, it keeps the natural pollen, enzymes, antioxidants, and polyphenols that processing removes. It's a pure, single-origin whole food with no added sugars or syrups — many people simply prefer it as a more wholesome everyday sweetener with far more character than commercial honey. What does it taste like?

Why is it darker than other honeys?
The pine in it is a honeydew honey, made from pine rather than flower nectar, which gives it the deeper color and fuller body. Honeydew honeys also tend to stay liquid longer, so this one is slower to crystallize than lighter honeys.
How do I store it, and why did it crystallize?
Store in a cool, dark place. No fridge, since cold speeds crystallization. Crystallization is a natural sign of pure raw honey; to bring it back to a pourable state, sit the jar in warm (not hot) water and stir. Stored well, pure honey doesn't spoil.
Is it safe for me and my family?
Our honey is a natural, USDA Organic food with nothing added. As with any new food or herb, if you're pregnant, nursing, taking medication, or managing a health condition, check with your doctor first. As with all honey, it isn't suitable for infants under 12 months.
Does honey expire?
Pure raw honey is one of the only foods that lasts virtually indefinitely. Over time it may crystallize or deepen in color; both are natural and harmless. If there's a best-before date on the jar, that's there for labeling — the honey keeps well beyond it.
